Cowboy Cookie Recipe

This is an old family favorite, from somewhere before my Nana's generation. It's great because it's adaptable. You can plan ahead and buy the delicious one-two combo of dates and coconut, or carefully avoid items that your loved ones are allergic to, or grab a cup and a half of whatever random chunky bits of fancy that fill your cupboards.

Here we go!

Cowboy Cookies

Ingredients:
1 cup brown sugar
1 cup granulated sugar
1 cup Crisco (I use 1/2 cup Crisco, 1/2 cup butter)
2 large eggs
2 cups sifted flour
2 cups oatmeal
1 tsp salt
1 tsp baking soda
1 tsp baking powder
1 tsp vanilla
12 ounces chocolate chips OR
1 1/2 cups raisins or dates OR
1 1/2 cups chopped nuts
1 TBsp ice water, muy importante!

Instructions:
Cream together sugars and shortening (and butter). Beat eggs, vanilla, and ice water. Add to the sugar mixture and mix well. In a separate bowl, blend together flour, salt, baking powder, and baking soda. Mix the dry stuff into the sugar and egg mixture, and mix the oatmeal in about the same time. Add the chips, dates, nuts, or whatever floats your boat. Drop by rounded spoonfuls on an ungreased baking sheet. Bake at 350 for 9-12 minutes. Cool for a minute on the pan, transfer to a wire cooling rack. IMPORTANT STEP: sample one to four cookies in between pan cooling and wire cooling. Smile.

The ice water makes it perfectly chewy.
