Celebrate our 300th post with a blueberry 'syrup' recipe

done with procrastinating. was going to make it super meaningful and awesome. instead, you get this, which is delicious.

Blueberry 'syrup*'
ingredients used:
2 cups blueberries
2 cups brown sugar (out of white)
1 cup water... Read More
about 4 drops lemon essential oil (would use 2 next time)
(would add 1/2 to 1tsp of vanilla extract next time)

place all in a pot, mash with potato masher, bring to rolling boil, bring down to a simmer about 10 minutes. you can strain the syrup through cheesecloth or other filter, or, if like me, let cool and put in glass jar. use within 2 weeks, or can/jar with fancy sterilizing technique. i haven't progressed that far in my urban homesteading ;)

makes roughly 2 cups. good on pancakes. also, can add a couple of tablespoons to lemonade, although normal lemonade season is fading fast.

* I don't think it can officially be considered a syrup, because I left some of the mangled fruit in. I like it that way, but you can strain it through cheesecloth or coffee filters or a folded paper towel.
